Crisp Bread
One of our favorites, smoked salmon with cream cheese on a Multigrain base. I have decided that this delight is a worthy splurge. But rather than a big bagel base, I have been buying Wasa multigrain crisps. The goal is to get healthy omegas and a good portion of fiber.
I decided to try to make my own crackers/crisp bread using sour dough discard. The Wasa crackers aren't too expensive at about $3.75 per package of 20. Of course home made is cheaper.
I grind a lot of alternative flours. This batch of dough was made with some white and some wheat flour. For my own grind, I used chick peas, brown rice, and lentil, plus some ground baking banana peel (a lot like plantain). I also included honey, one egg, sesame seed oil, and milk. Lots of protein.
After rolling the dough really thin, and brushing it with more sesame oil, I then sprinkled on kosher salt. We are out of sesame seeds, which I would've otherwise sprinkled on. I poked lots of holes to keep bubbles from forming during baking.
We have a convection oven, which I love. There's a large, shallow, wire basket used with the air fryer and sous-vide functions. It's also great for baking in crispiness, because you get more direct heat on the bottom. I set the oven temp for 375°, which the oven adjusts to 350° (f) for convection. I kept the dough on the parchment paper I rolled it out on.
My first batch was expirimental to figure out baking time. I had to pull the tray out and check for doneness. These weren't optimal so I broke them into small pieces for the dog. The rest were crispy perfect. I ended up with a lot of crisp bread -- probably the equivalent of a couple of packages of biscuits.
As for the dog bicuits, our girl likes them just fine. So not only did I save a few bucks over biscuits, I saved on a bag of dog treats!
I love your blog! I also made crackers today! I made with organic flour but I should try using my discard sourdough starter! What a great idea! I also added sesame seeds and sprinkled everything but the bagel from Trader Joe’s😁 Katxx
