Tuesday was a pool day, as usual. I wore that coral shirt I keep thinking I don't like all that much because it's polyester. Yet I wear it a lot! Today was more of a blue theme. It's been a little cooler today too, by at least five degrees. We've been averaging 92, however today it was only in the low 80's. Today I thrifted and Flashed.
My purchases today were mostly red ticket 50% discounts, but I splurged on the hats. Both are hunting related. The white one is made by Bird Dog and that's a pheasant logo. The Yankees hat is orange blaze -- the color hat you wear hunting. I couldn't resist either. Five bucks for both. $10 total, rounding up 67 cents for the vets.
The blanket is for our living room couch. The linen napkins were four for $2, and nice for casual guest dinners. The pillowcases will be for Frankie's crate. I am making a new pad and want the pillows to match.
We were just about out of nut butter, so I made more yesterday. There was a handful of various nuts left, so I just stuck them in a jar. Great to eat out of hand, or to toss on a salad. We had burgers on the 4th, so there were two pretzel buns to finish. I also had a potato, lettuce, and a tomato that needed to be used. Dinner was a portobello mushroom over fresh baby spinach, with a goat cheese and fig spread (from our party), topped with grilled peppers. I air fried everything, doing it in two batches. The potatoes first (finished in the oven), followed by the mushrooms and peppers. Yum!
Tonight's dinner was more of a production because I had additional time to prepare, since it wasn't a pool day. We love spanakopita, but I don't make it nearly enough. It's why I needed spinach! Frozen makes the most sense since it gets baked anyway and it's finely chopped. This batch used two eggs. One for the filling, and another egg white for a pastry wash. I had salad fixin's on hand already, plus chicken sausage from Flashfood. For our beverage, I made a pitcher of wine spritzer. Dessert was a slice of pie and homemade ice cream. It was a perfect night to dine outside, and our meal was even better because of that. Two slices remain, which will be lunch tomorrow. Also, two sausages will go over a salad tomorrow night, along with pizza.
Frankie is healing well. I hope to cut back on sedation tomorrow. She's not happy about having to wear protective gear. I am keeping the gator on her by sewing a hair elastic on the bottom (to loop over her tail), and the elastic clips you use to keep fitted sheets in place across her chest. This makes it impossible to get at her sutures. Her wound looks good, but her boobs have gotten a bit swollen, which I think is due to the sudden drop in hormones from losing her uterus/ovaries. Her body might think she just had a litter and needs to nurse. She is also down at least a pound. I expect all of this to normalize by next week.
It has been kind that so many of you keep her in your thoughts and prayers. She's not particularly happy right now, but we can take comfort in knowing others care about her. Thank you!

I’m glad that Frankie is continuing to heal. That was a great price for those good eggs! The spanakopita looks great! I like how you cut it before you baked it.
