Shoe Ambition

 

I have been waiting to wear these leopard patterned Enzo Angiolini loafers for months! They were a 99-cent thrift back in the fall, but the weather wasn't right for them -- until today.  The top is clearance/outlet Talbots which was just a few dollars.  My brown leggins were a Walmart clearance for three dollars.  I was stuck out of town and needed to buy clothes because my car was in the shop for days.  I grabbed three pairs just because they were marked down so low and had everything delivered to where I was staying.

Boy was I hungry after a couple of hours at the pool today. My goal was to find lunch in the refrigerator and my only option was potatoes we didn't finish last night.  I baked them with cheddar cheese, then topped with sour cream.  Iced tea steeped by me too. A yummy, filling, and cheap lunch!

Dinner was chili with white and black beans.  The chips were Flashfood!

I started out first thing today making stock using rib bones from last night's dinner.  It simmered while I was out swimming, stretching, and sweating in the sauna.  I did not add any salt, and my guess is there was only residual sodium from the ribs.  There was also corn-cob, celery, and carrots.

One of the reasons I think it's healthier to cook at home, is you can put lots of healthy and fiber-rich veggies in your meal.  For this one, it was red pepper, celery, onion, and fresh corn.  For sauce, there's the leftover pork marinara from earlier in the week.  That sauce was made with canned tomatoes, carrots, celery, and onion -- so this batch really had a lot of healthy stuff you wouldn't find in the canned or a restaurant version.


While the corn cobs went to compost and the bones landed in the garbage, the rest of the stock flavor went into oatmeal for Frankie.  This included rib grizzles and bits of meat.  I made the oatmeal using hot water and a few ounces of stock which I had left after making the pot of chili.  Frankie is definitely a part of our near zero food waste program.


I mentioned the corn chips were Flashfood, but so was my flavor secret ingredient.  Months ago, I purchased a small package of chorizo slices.  They're cured and last a long time in the refrigerator, so I am able to take out five or six slices at a time, then cut them into bits for added flavor is chili, stews, soups, etc.  They add great flavor into chili!

Sometimes it takes me so long to work through what's in the refrigerator and freezer because I get so many extra meals out of ingredients from a single meal.  If I end up throwing out a portion or two of a meal we don't finish, I don't tend to feel too badly about it because chances are it was made from something I'd already used a time or two.

So tell me, have I convinced anyone to feed leftovers to their pet?

    1. Frankie wishes she got more meal samples! She does get whatever drops -- which she's good at grabbing fast! But yes, she mostly eats what we eat.

  2. That's the way I feel...husband says we should make sure to eat out of the freezer so the food won't get old. Then it takes a couple of days to get through the roast with roast beef sandwiches and stew. It will take awhile to empty it for sure! Have a great week.

  3. Those shoes are awesome, and what a great buy. Yep, we definitely live parallel lives. I made stock this week as well. Pulled some beef bones out of the freezer and made beef stock and also used up some chicken bones doing the same thing.

    1. I really love these shoes and am going to wear them more! We had dinner at my bestie's tonight and she roasted a turkey. We now have the neck and giblets, so I will be making more stock tomorrow! Maybe WWJD should be "what would Jackie do?"
