Salad Days


This is what I wore to go out to lunch with a friend yesterday. Talbots and Ann Klein. My friend wore a black and white top, with black capris. We matched! The company was great, but my lunch was a little disappointing. My BLT on sourdough toast was not toasted to be even slightly brown, and I swear it was just plain white bread. But I didn't want to bring down our lunch by complaining. As for my attire, I tried belting and tucking to give definition to my waist, but neither worked. In fact, calling attention to my waist made me look even frumpier. One issue was also that I got bogged down trying to set up a payment on-line, then realized I needed to be ready to go in a half hour -- so there was minimal planning and little to no time to execute!


Yesterday was a salad and chili day. The cheese is FlashFood Queso. I used a little FF guacamole on the chili too. Early in the week, I got three trays of meat at Save-a-Lot. I took slices of stir fry beef and cut them into small chunks to use for this dish. There's also fresh corn. Salad dressing was made with a fresh lemon. This is the type of meal I am trying to eat most nights.  My fella has lost almost 25 pounds this year, and I am trying to make it a healthy journey. I've dropped a few pounds too. Mostly because I can reliably swim now that he is retired. We both had chili for lunch today.


I ran out of iced tea concentrate, so today I had to make more. We are also down to our last slice of sourdough bread, so it was a dough day as well. I have been using bread flour, which costs more -- but it's still cheaper (and healthier) than store bought. Tommy picked up a half loaf at Wegmans a while back, which was $3.50.  A bag of bread flour is $4.99, and I can make at least three loaves. This batch was enough for one loaf and a pizza. It's important that I shape and size the loaf so it will fit in the toaster.


Speaking of the toaster... I was noticing that the percolator was covered in water spots and fingerprints. Even though it was clean, that was just annoying. Also, there were too many crumbs in the toaster. Tommy is supposed to be the toaster guy, but he thinks once a week is enough. So, I emptied it (it needed it) and gave it a quick wipe-down. After looking at this picture, I realized a few more prints needed to be wiped off. I address things a few corners of a room at a time. 


I also had to spend some time "out back." Our back porch/mudroom/grooming studio was just gross. While this might not look like it's been cleaned, it really has been reorganized. The floor was definitely gross. Tommy is going to clean the woodwork and windows tomorrow. We are having a party next week and people will be going in and out of the porch, so it can't be disgusting. Mudrooms look so orderly on TV, in magazines, and on Instagram. But if they are truly going to serve their purpose, they can't possibly stay pristine. At least not in my world!

I did also manage to hang some laundry to dry. This is my newer of the two lines and after this load, I have had to shorten it. Even on a cloudy day, it was still hot enough for it to dry in an afternoon.


My dough yielded this crusty loaf of bread, and thin-crust cheesy pizza. The topping is just cheese (FlashFood, the other half from the pie a few nights ago) and onion, with homemade sauce.



I made another romaine salad tonight. Bagged salad is allegedly a waste of money, but when I buy whole heads, I discard a lot too. Sometimes that goes into stock, but often it ends up as compost. So I am not so sure the pre-washed bagged stuff is that foolish. Tonight's salad had a few unconventional but extra healthy ingredients. For fiber, I chopped one heart of palm and also added in about a dozen Lupini beans. For meat, I cut up chunks of Perdue chicken strips. They are the ones that come in a bag already cooked.  They were FlashFood and in the freezer for a couple of months. It is topped with grated Asiago cheese, dressed with fresh lemon vinaigrette and a squirt of Caesar dressing. This was the perfect summer al fresco dinner.

What unconventional ingredients are you adding to salads? I like new ideas!

  1. I like to add apples and red pepper plus cucumber if I have it. Goat cheese too sometimes. Nice looking healthy meals.

    1. I especially love apples on greens, spinach, etc. And when is goat cheese wrong? Never!

  2. I love to add apple slices or raisins or mandarin oranges to our salads for a bite of sweetness every now and then or even dried cranberries. Your salad and pizza look good. Would be so nice to sit outside and enjoy dinner. Your toaster is so pretty being stainless steel. And I agree with you on the mud room, they are a working room so easily stay a little bit messy.

    1. Super Yes to Mandarin Oranges! Sun Maid makes a mix that comes in a bag. Have you tried those? Tommy doesn't like dark raisins, so I either have to hide them in a mix or use golden -- which are great on salads anyway!

  3. That's funny that you and your friend were in matching outfits, that often happens with me, its a great indication that you're hanging out with like-minded people.
    Good on you for not making a fuss about the disappointing lunch, the company is far more important!
    Try the half-tuck when you wear that combo next - it adds some waist definition without looking like you've tried too hard.
    We love capers, pomegranate seeds, Alpine strawberries or the Cretan's favourite salad ingredient, stale bread soaked overnight in tinned tomatoes - delicious! xxx -

    1. I must try capers! I did try a half tuck and since I wasn't wearing a belt, it did not look right. Argh! That's what I get for running late and not planning better. It's gotten to the point where I hesitate to complain about food, etc. It's not the servers fault, and it seems the kitchen is always understaffed wherever you go. I also just don't want to come off as a Karen. Do people use the term "Karen" on your side of the world?

  4. I tried a half tuck yesterday, but ended up changing the top for another. I like all the additions to salads mentioned above, but am kind of particular about which ones go together...I don't combine sweet fruits (apples, oranges, raisings) mixed with tomatoes. I get wanting the mudroom to look decent for guests. My front door is a long way from the driveway, so everybody comes through the laundry room...not a great first impression, but ce la vie...even when people are coming for the first time, I think it's friendlier to invite them through the nearest entrance than the formal entrance.

    1. ps: I do not like washing and tearing/cutting leafy greens, so I find that at least with bagged salad starters we are eating more vegetables. I'm willing to pay a little extra to make salads easier.

    2. I am soooo with you about mixing sweet fruits with tomatoes. Tommy thinks I am odd, so I am happy I am not alone! I will also choose the convenience bag over buying more than I need and seeing it rot.

  5. You are inspiring me with your Journey to get healthier and lose weight. Your Domestic Goddess skills far outweigh mine tho', freshly made Bread sounds Divine and Sublime, but I'm on the dreadful No Carb Restrictions right now, so I'm petulantly ditching a lot of those Foods forbidden... dammit! Sorry your Luncheon disappointed, nothing worse than outlaying for a good Meal out and having them disappoint with the offerings... it's bad business for any Restaurant. I'm such a Creature of Habit that I know my fav Haunts can and will Deliver the Goods if I'm going to spend $$$ eating out. But, you had good Company for that Luncheon and that counts a lot too.

    1. I couldn't cut out bread, but will only bake sour dough or whole grains -- often mixing in ground legumes, etc. It has to be high fiber or gut friendly (like sour dough). Luckily, my sandwich was only $14, so I wasn't going to make a big deal. But it was disappointing!

  6. I am so sorry that your lunch was not good, but at least you got to spend time with your friend. Your meals always look so very tasty. Not sure I add anything odd to my salads, but I have been known to add a few odd items to stews and casseroles.

    1. Thank you Jackie! I will also admit that I like those salad kits. Stews, casseroles, and soups are the way to use up odds and ends. And sometimes those additions are so good, that they are worth repeating!
