Making it from What We've Got

 


My goal tonight was to complete a left-over cycle and get something out of the freezer. I used three Flash Food purchases while I was at it.  The soup is the shrimp and squash (FF) bisque I had planned from last night's leftovers. I thickened the soup using focaccia bread which came from Flash Food -- and we finished it all by having a few pieces on the side.  It was delicious and Tommy has lunch for tomorrow.  The other element was lobster mac and cheese -- also FF.  The base was a veggie stock from yesterday with added flavors from boiling in shrimp tails.  If it has flavor, it's gonna get used!


My first project of the day was to make chestnut paste from the package that came in my Flash Food produce box last week.  I had already roasted and shelled them, so all I needed to do was get on with the job.  I boiled them in milk with sugar and vanilla for about 20 minutes -- with a touch of bourbon for taste.  You strain the nuts and then chop them a bit smaller before putting them in a food processor.  I slowly added in the milk so that it became smoothly blended. These nuts are hard, so the food processor needs power.  This will be great on toast or biscuits.  Chestnuts are very high in fiber and vitamin C. I plan to send a small jar to work with my husband.

 

I did make another FF buy today. Mostly because the store was on my way home from walking Frankie.  When I can get a pound of fresh mozzarella cheese for $3.80, I'll make room in the freezer. It helps that this stuff is already sliced, which makes it easier to use too.  The granola bars are the same ones I got a few days ago but were such a good price I decided to grab another.  As for other bargains, CVS photo has a buy one-get-two free deal on photo enlargements, so I ordered three prints.  Each print was $4.33 each -- saving me $26.  Cereal was on sale too, so I grabbed a box of Frosted Mini Wheats for $1.99.  I like to just grab a handful when I need a snack.  



My girl is freaky smart. When she saw what I was wearing, she got all excited.  She can tell the difference between fashion and going out with the dog clothes.  We walked at our cemetery.  They were pretty busy -- which is kind of normal for the spring. More people seem to pass away then.  Frankie loves the sound of a backhoe, because it means there will be people working them.  Once it warms up, she feels the same way about lawnmowers.  She believes everyone who works at the cemetery is her friend. And many of them are!

We didn't have the most productive day, but we still did OK.  Is it warming up where you are? Have you been able to get outside? I think that justifies getting less done inside!
