Adulting

I started my day off being a responsible adult.  It was a day for the dentist, so I dressed comfortably. After my exam and cleaning, I went to Aldi for a small grocery run, then to the pool.  I am loving my new thrifted Cole Haan flats. They are a little loose but fit my inserts and I can wear them with socks.

I went to Aldi for beans and peppers. A sleeve of three colored peppers was $2.49, and each sleeve is a pound. That's more expensive than Price Rite's $1.99 per pound sale on red peppers, so I took a pass.  However, the price on mushrooms and beans are the best I've seen, so I grabbed them. Turns out they had vegetable stock for $1.35.  Veggie stock is cheap to make, but sometimes I need convenience. The problem is that even the low sodium version is too high.  This means I will need to make my own and mix them together. My goal is to get out the pressure canner and make a large batch.

I did very well at Price Rite -- especially because I found a marked down salmon fillet, which I made for dinner.  With tariffs on Italian products, I decided to grab even more of my favorite imported pasta.  Unfortunately, they were out of the large cans of 79 cent crushed tomatoes.  I am going to watch the price of canned tomatoes and if it starts to go up, I will then stock up.  Frankie benefitted from the tin of sardines -- they were mixed into this week's batch of oatmeal she gets for lunch.

I made up a big bowl of salad for dinner and immediately put 3/4 of it into a bag for Tommy to bring to work.  The rest of it was tossed with the remains of the garlic/lemon/honey dressing I made last week. Tommy loves having salad with lunch, so I was happy to do this for him.

Salmon turns out so well in the air fryer. The potatoes were great too.  This was a big piece of fish -- over a pound.  Tommy will bring what's left to work and have it with a portion of salad.  I used my orange glaze as well as some of the lemon/garlic spread from last week.  I also added some teriyaki sauce and 1000 Island dressing.  This made a for a nice crispy crust.  It was delicious. The meal was probably ten bucks at the most.  A bit more expensive than many of our meals, but way less than if we were at a restaurant.

I did Frankie's trim after dinner while Tommy cleaned up from dinner.  This is not a show cut. I took more off her ruff in front than I would for the ring. We have no plans to show her this summer. It's likely I am going to spay her if she ever has her next heat. She needs more socialization and playtime but can't go to doggy daycare because she is intact.  Her behavior and social skills are more important to me than ribbons and titles.  Plus, one of her breeders wants his females spayed between 4 and 6 because after that, they run the risk of certain cancers.  Having her hormones has been good for preventing other cancers, so I think this will be the best plan for her health too. She loved doggy daycare when she was a puppy -- and they loved her.  As for the trim, she was miserable but seems to have forgiven me!

How is everyone's post-holiday week shaping up? I've got a few more things coming up and am hoping after that to be able to coast for a month or so!

  1. A coworker lives in Florida and she told me early in the year to make sure I start picking up tomato products right now. She pointed out that many farms have set out U-pick signs at farms that used to grow for production. The picker population is just not there this year. The tomatoes were rotting in the fields. As we all know this effect will not be felt for at least 6 months.

    1. I have increased my efforts to follow your friend's advice. Today, I placed a Walmart delivery order for more canned and jarred product to stockpile. I had spent summers for 20 years in an area that produces more apples than any other region in the country. There were visa programs for seasonal pickers. Those people will not want to come here, and it will likely devastate the farmers. And it is a red county too. We are all in tough times!

  2. I'm a lot upset about FDA inspectors having their support staff laid off. Ones who inspect overseas generic pharmaceutical plants now have to make their own trip reservations which takes time away from their own work, follow up reports, etc. And I am really stressed over the decrease in our food safety as well. Just another thing that keeps me up at night. I knew someone who died from listeria infected salad mix, and I helped his wife by transcribing her notes to submit attorney. Sadly he was infected by food while he was in the hospital, so his resistance was down, but also the older we get, the more likely not to be able to fight it off.

    1. That is a huge fear for me too! Our food safety is in peril. It's only a matter of time before many are sickened by a food borne illness that could've been prevented with proper staffing.

    1. Good work! I am waiting for my handyman to replace a light fixture in our attic and it better be soon -- before it gets hot up there. It's only been a storage area for a couple of years but it already needs a serious reorganization. It never ends!
