Eggsellent!!!

 


3 Dozen eggs! A lady I know lives about an hour and half away in the sticks.  She keeps chickens (and other birds), grows veggies and fruits, breeds and rescues sporting dogs.  "Aunt Robbin" caught Frankie when she was born! A result of owning farm birds, but having a spouse who can't eat eggs, she is generous with them.


We met up today and she brought me three dozen farm/pasture eggs.  What a bonanza! I was able to fit them all in the refrigerator -- although they don't need to be kept cold. They will last a month longer this way.  We won't have to buy eggs for another month. And these fresh ones taste so good. Frankie came along, so she got to have a chance to see one of her favorite people.  She is way over-due for her heat, so I don't want to take her down for a visit and risk and incestuous hook up -- Frankie's uncle, JW, belongs to Robbin.  Not a risk I want to take!



I decided to make a tapenade with a sausage I got on Flashfood a few months ago. These are tasty, but really tough.  Using oil, olives, pickled beef, and a bit of fennel, I was able to puree a paste that we can enjoy on crackers.  And it turned out to be kind of tasty.  Since we like to snack, it's going to be something we can enjoy as an appetizer before dinner.


Dinner was a whole chicken which I cooked in the air fryer.  I'm still using up the citrus glaze that's been open for a few weeks.  This looks burnt, but the chicken was perfectly cooked, and we enjoyed the charred sweetness.  There was plenty of juice in the fryer, so I mixed it with pasta. The pasta is high fiber wheat, and the veggies are carrots, green olives, and fennel which browned up under the broiler.  Tossed in the drippings, with lemon, grated parm, and a little more olive oil, it was a healthy side which tasted really good.  There is a good amount left, which probably will go into soup tomorrow.

I also did laundry this afternoon and started a poster for the protest next weekend.  The ever-changing tariff landscape is infuriating -- but I am not sorry I have stocked up.  When botoxed, overly-made up conservative media television anchors tell us we just need to be more economical and trust that the tariffs are good for us, I want to scream.  We couldn't be any more economical and responsible than we're already being.  That doesn't mean we don't enjoy our life. But it's the bullshit we can do without!

  1. I got some free eggs this week as well. My son-in-law keeps chickens. They are down to two chickens that are about 7 or 8 years old, but are still giving enough eggs to share. LOL

    1. And they taste so much better!!! I nearly spit out my coffee when someone on a conservative news station said we should all be keeping chickens. As if upkeep is free and the average person would know how to responsibly do it. I am so very lucky to be given these for free. Keeping chickens would not be a good fit for us.

  2. Good for you on getting those eggs. I still can not believe how much you pay for eggs in a store. Looking forward to seeing your poster for the next protest.

    1. The strange thing is that the better eggs haven't gone up at the same proportion as the regular ones. With a price difference of about 50 cents, I'm all in on buying the better ones. This lot will save me about twenty bucks. And my next poster is going to be funny. At least I think so!
