It Starts and Ends with Food!
In spite of how expensive eggs are, I still think they are an ideal breakfast. We spend extra for cage-free/pasture-raised/organic. We buy what is available at the better end of the quality scale because they taste better. If I plan to bake, I will buy the cheapest I can find. But for omelets, we like the better-quality eggs. They are around five and a half buck a dozen. I will be getting a huge bonanza of farm eggs from a friend who has more than she can consume from her own hens.
I like using refried beans for filling. They are high in protein and dense. One can will last a couple of weeks since I just use one egg. Once my mix was made, half of it went into the freezer. The rest will be used for the next five days or so. Having homemade sourdough bread to go with this all, makes for an extra yummy and nutritional start to the day.
My outfit today was chosen because it would be easy to change in and out of. It was a pool day. The top and legging were 99 cent thrift finds. I swim for about a half hour and stretch for about twenty minutes. Today there was an open lane in the deep end, where the swim platforms for racing are. The nice thing about that is I can do biceps and triceps pull-ups every couple of laps. Once I am done in the pool, I indulge myself in a half hour in the sauna. Of course, I shower and wash in-between, and then another time once I have finished sweating. So I am there about two hours. On the way home today, I picked some stuff up from Aldi. But once home, I stayed in -- it was cold with wet snow!
I have not put beans in my omelets, but it's genius, and I will definitely be doing it soon!
ReplyDeleteI was surprised how much I liked it. I wish the beans had less sodium, but you only need a little more than a small scoop for one egg.

ReplyDeleteMost of my days are, luckily, wonderful! I decided to try beans in an omelet because of breakfast burritos. Sort of the same concept but without the wrap!

DeleteThat salad looks delicious! On the rare occasion I make a frittata I'll chuck anything in, including beans. You're right, they work very well.

It sounds like you're adapting to your new regime very well. I like doing those poolside pull-ups. I like to clap my hands between pull-ups but Jon says I'm just showing off!
